Cacao Energy Balls

INGREDIENTS

50g cacao nibsenergy_balls-01
50g shredded coconut
50g almond flour
1 tablespoon coconut oil ( liquid if possible )
8-10 medjool dates ( pitted )
50g sunflower or coconut or almond butter
50g hemp or flax seeds ( ground )
1/2 teaspoon Himalayan pink salt
1 level teaspoon cinnamon

 

METHOD

In small nutribullet grind the seeds ( flax not hemp in this one)energy_balls-02

In larger nutribullet container blend cacao nibs and shredded coconut

Chop the dates.
* All this can be done in a food processor but I don´t have one to hand so used the Nutribullet throughout. *

 

Add the dates and almond flour to the larger container which energy_balls-03
contains the blended cacao and coconut mixture.

Add the cinnamon and salt.

 

 

 

 

 

 

 

Add the blended seeds from the smaller container and the energy_balls-05
liquid coconut oil and butter.

Blend …yes for a nutribullet it is very dry so only whizz quickly energy_balls-07
and then take off the lid and use a spatula to blend. It may take a few quick whizzes and stirs whereas in a food processor you will be fine.

 

 

 

 

This is the mixture plus a bowl of shredded coconut for rolling energy_balls-08
the balls in. You can however use crushed cacao nibs or hemp seeds as an outer coating for rolling.

 

 

 

 

 

Take the dough out , roll and slice into pieces.energy_balls-09

You are aiming for 12 pieces of similar size.

 

 

 

 

 

Roll them into a ball and coat in the coconut. energy_balls-10

 

 

 

 

 

 

 

Here are the 12 balls ready to place in the refrigerator for energy_balls-11
1 hour before serving.
They can also be frozen for up to 3 weeks but ours
disappear too quickly for that to happen!
